Try this healthy chicken traybake recipe that is one of my favorite chicken preparations. This is an extremely tasty and easy to make kind of recipe, here chicken is baked in one pan along with colorful vegetables, almonds and aromatic North American flavors.
I use to prepare this recipe for my dinner as it is really simple to make and takes little time in preparation. It is loaded with lean protein and vegetarian nutrients, a complete meal package any bodybuilder can ask for.
What I like most about this recipe is, it can be served in the same baking tray, when you are really hungry for food. Enjoy your very own roasted chicken and healthy vegetables along with Greek yogurt dip straight from the pan.

Ingredients
- 1 fillet Chicken breast, low fat
- 1 medium Bell pepper (green/yellow/red)
- 1 cup, chopped Onions, raw
- 1 small, large, medium Sweet potato, raw
- 1 tsp Spices, garlic powder
- 1 fl oz Lemon juice, raw
- 1 tsp Lemon rind, grated
- 1 gram Almond Nut
- 0.5 tbsp Ground cumin
- 1 tsp Spices, paprika
- 1 tsp, whole Spices, fennel seed
- 1 gram Oil, olive, salad or cooking
Instructions
- Cut the chicken breast in small pieces, also peel and chop sweet potatoes.
- Cut the bell pepper and onion in thick wedges.
- Preheat the oven to 375 degree F.
- Take big bowl - add chicken, onions, bell pepper, sweet potatoes, salt and pepper. Mix well to combine all.
- Add garlic, lemon juice, spices, oil and zest in a small bowl and whisk together.
- Pour over the chicken mix and stir to combine.
- Place the chicken and vegetable mixture in baking tray and spread evenly.
- Bake in the oven for about 40 minutes or until chicken is soft and tender.
- Add almonds in the last 10 minutes and turn the chicken and vegetable pieces for even cooking.
- Serve along with Greek yogurt dip.
