Ingredients
- 0.5 lb Beef, chuck for stew, separable lean and fat, choice, raw
- 1 cup, sliced Apples, raw, golden delicious, with skin
- 0.5 cup Beef Broth or Bouillon (Canned)
- 1 tsp Oil, olive, salad or cooking
- 1 tbsp chopped Garlic
- 1 dash Salt, table
- 1 tbsp, ground Spices, pepper, black
- 1 tsp Spices, cloves, ground
- 1 tsp, whole Spices, cumin seed
- 1 tbsp Spices, paprika
- 1 tbsp Spices, cinnamon, ground
- 1 tbsp Spices, coriander seed
- 1 tbsp chopped Onions, raw
- 1 cup, chopped or sliced Tomatoes, red, ripe, raw, year round average
Instructions
- Heat oil in a deep sauce pan and cook the beef cubes until brown from all sides. Remove the beef from the pan and set aside.
- Now in the same pan sauté onions until translucent, add garlic and cook for one minute.
- Add tomatoes and all the spices, stir and cook for 2-3 minutes.
- Now add beef, apricots, stock and chopped apples; stir and bring to a simmer.
- Cover and cook for one hour, or until the beef is soft and tender.
- Serve hot along with rice or bread.
