Ingredients
- 0.99 large Egg, whole, raw, fresh
- 0.99 tsp Oil, olive, salad or cooking
- 0.99 clove Garlic, raw
- 2.97 cup chopped Broccoli, raw
- 0.99 gram Spices, pepper, red or cayenne
- 0.99 dash Salt, table
- 0.36 cup Cheese, parmesan, dry grated, reduced fat
- 0.54 cup All-Purpose Flour
Instructions
- After separating broccoli florets from the stems, cut them into small chunks of ½ inch in length. You should roughly have 3 cups of them ready before cooking.
- Take a small saucepan and boil little water in it. Add broccoli in it and allow it to simmer for a few minutes. Then set aside the broccoli after draining out water.
- Then transfer a beaten egg in a large bowl. Now add pepper, salt, garlic, cheese, flour and the cooled broccoli. Mash all these ingredients such that small chunks are formed out of them. Once all the ingredients are mashed to the desired level, use a spoon to bring them all together. Now add seasoning and adjust the taste.
- Now place a large skillet (nonstick type) over a medium flame and heat little oil in it. Once the oil is fairly hot, drop in a mound of batter into the pan and flatten it using a spoon. Now use the same approach for the remaining batter. Once the fritter is fairly brown flip it over and allow the other portion to cook for a few minutes or until they become brown.
- Now transfer the fritters on to paper towels for draining out excess oil. Serve them immediately.
