Sweet corn soup is my childhood favorite recipe, now I have modified it to make it more nutritious and filling. I add some more ingredients to the soup to get the maximum out of it. The soup is loaded with corn, peas, carrots, celery, bell pepper, mushrooms and some spices.
Sweet corn and green pea soup is extremely tasty and healthy. Though you can use frozen corns and peas for this soup but it is advisable to use fresh corn cobs and peas for the preparation to avoid higher dose of sodium.
Try this easy corn and green pea soup to your meal to get the high dose of antioxidants, vitamin, minerals and muscle building amino-acids. It also goes well with your streaks and baked fish recipes.

Ingredients
- 1 cup drained, rinsed Corn, sweet, yellow, canned, drained solids, rinsed with tap water
- 1 cup Peas, green, canned, drained solids, rinsed in tap water
- 1 cup, pieces or slices Mushrooms, white, raw
- 1 medium Carrots, raw
- 1 stalk, medium Celery, raw
- 1 tbsp chopped Onions, raw
- 1 tbsp, leaves Spices, thyme, dried
- 1 tbsp chopped Garlic
- 1 dash Salt, table
- 1 tbsp, ground Spices, pepper, black
- 1 tsp Oil, olive, salad or cooking
- 1 serving SWANSON BROTH, Vegetable Broth
- 1 cup Milk, reduced fat, fluid, 2% milkfat, without added vitamin A and vitamin D
Instructions
- Take a deep sauce pan for making the soup. Heat the pan over medium heat adds oil and saute onion and garlic for about a minute.
- Add chopped celery, carrot, mushroom and vegetable stock.
- Cover and cook until vegetables are soft.
- Add corn, green peas, thyme, salt and pepper, stir and bring to a boil.
- Mix flour with milk in a small bowl, add to the soup. Stir and cook for 5 minutes or until thick.
- Remove from the heat and serve in soup bowl.
