Ingredients
- 1 unit Egg, whole, boiled
- 1 tbsp chopped Onions, raw
- 1 Italian tomato Tomatoes, red, ripe, raw, year round average
- 1 small Carrots, raw
- 1 cup Coriander (cilantro) leaves, raw
- 1 stick Cucumber, peeled, raw
- 1 oz Peanuts, all types, dry-roasted, with salt
- 1 fl oz Lemon juice, raw
- 1 dash Salt, table
- 1 tsp Spices, pepper, black
Instructions
- Roast the sweet potato in the oven on high power for about 30 minutes or until soft the tender or use boiled sweet potato.
- Chop the eggs in quarter.
- Peel and finely chop all the vegetables, sweet potato and grate the carrot.
- Take a big bowl and add all the salad ingredients.
- Add lemon juice, mix everything together gently.
- Transfer to a serving bowl and sprinkle salt and pepper over it.
- Enjoy healthy tricolor egg salad.
- Roast the sweet potato in the oven until soft the tender or use boiled sweet potato.
