Ingredients
- 2.72 100g Fish, cod, Pacific, untreated, raw
- 1 cup Spinach, raw
- 1 large whole Tomatoes, red, ripe, raw, year round average
- 4 tortilla Tortillas, ready-to-bake or -fry, flour, shelf stable
- 0.2 container Yogurt, Greek, plain, nonfat
- 0.52 cup, sliced Avocados, raw, all commercial varieties
- 0.8 100g Onion, red, raw
- 1 tbsp, chopped Basil, fresh
- 0.52 tbsp Honey
- 1 tsp Oil, olive, salad or cooking
- 1 clove Garlic, raw
- 1 lime yields Lime juice, raw
Instructions
- First the salsa:
- Chop the onion, avocado, tomato, garlic and basil and mix in a bowl with the olive oil and half the lime juice
- The fish:
- Season with salt and pepper and fry in a pan with some olive oil for about 3 minutes on each side
- Squeeze the remaing lime juice over the fish before taking it out of the pan
- The dressing:
- Mix the greek yoghurt with the honey and add some seasoning to your own flavour
- To serve:
- Spread the dressing on 4 tortillas, add some fresh spinach leaves
- Divide the fish over the tortillas
- Add the salsa and enjoy
