Ingredients
- 1.04 eggplant, peeled Eggplant, raw
- 1.04 cup Sauce, pasta, spaghetti/marinara, ready-to-serve, low sodium
- 1.52 cup Egg substitute, liquid
- 1.04 tsp Italian Seasoning
- 0.48 cup Cheese, parmesan, dry grated, reduced fat
- 0.48 cup Cereals ready-to-eat, wheat germ, toasted, plain
- 3.04 1/4 tsp Garlic salt
Instructions
- Cut eggplant into thick slices of ½ inch each. Then cut each of the slices into strips of ½ inch.
- Now take a bowl and mix garlic salt, Italian seasoning, cheese and the wheat germ in it.
- Then dip the eggplant sticks into the bowl containing egg substitute and later coat it with wheat germ mixture.
- Now start arranging the eggplant strips on a baking sheet in a single layer.
- Then spray little cooking spray over eggplant strips and continue heating it for about 3 minutes. Remove it from oven and spritz with cooking spray and heat it for a couple of more minutes so that they are golden brown.
- Serve the dish with spaghetti sauce.
