Mini Bagel Pizza [Bulkbites.com]

These mini bagel pizzas are made with whole wheat bagel, egg white, scallions and tomatoes. They are easy to make and loaded with egg white protein and complex carbs. This is a winning breakfast meal, when you need lots of energy for the day ahead.
Add more or less cheese according to your diet plan; here I am using low fat mozzarella cheese for my mini bagel pizza to reduce the fat in the recipe.

Ingredients
- 1 bagel Bagel, wheat
- 1 large Egg, white, raw, fresh
- 1 tbsp chopped Onions, spring or scallions (includes tops and bulb), raw
- 1 cherry Tomatoes, red, ripe, raw, year round average
- 1 dash Salt, table
- 1 tbsp, ground Spices, pepper, black
- 1 gram Oil, olive, salad or cooking
- 0.5 cup, shredded Cheese, mozzarella, nonfat
- 1 tsp Italian Seasoning
Instructions
- Preheat a grill pan on high to grill the bagels. (You can also use a Panini-grill)
- Cut the bagel in half and roast for 2 minutes on the open side.
- Heat a skillet over medium heat, add oil and sauté scallions for 2 minutes.
- Add egg whites, salt and pepper and cook while stirring continuously.
- When egg whites are ready, spread it over the tossed bagel, topped with tomatoes (cut into half) and cheese.
- Grill for 2 minutes just to melt the cheese. Serve immediately.
