Ingredients
- 2 fillet Fish, salmon, Atlantic, wild, raw
- 2 medium whole Tomatoes, red, ripe, raw, year round average
- 1 fruit Grapefruit, raw, pink and red, all areas
- 1 tbsp, chopped Basil, fresh
- 1 fruit without seeds Lemons, raw, with peel
- 1.5 100g Multi grain rice, cooked
- 4 slice Squash, summer, zucchini, includes skin, raw
Instructions
- Cut the tomatoes into small cubes, remove the seeds
- Peel and segment the grapefruit, cut into pieces
- Chop the basil and make the salsa: add the tomatoes, grapefruit, basil and 4 tbsp of oil to a bowl
- Add pepper, salt and lemon juice to taste
- Brush the salmon with oil and sprinkle with pepper and salt
- Heat up a grill pan and grill the fish for 8-10 minutes
- In the meantime: cut the zucchini into 1/2-inch-thick slices
- Brush the slices with olive oil and sprinkle both sides of the zucchini with oregano, garlic, salt and pepper
- Grill until zucchini is tender, about 4 minutes per side
- Cook rice according to the package directions
