When I crave for a hearty, fulfilling and wholesome meal, I try out this chickpea & vegetable curry on a bed of brown rice along with a bowl of Greek yogurt. This recipe is great in supporting my muscle building goals. The vegetables contain many beneficial vitamins, minerals and fiber. Brown rice is there to compensate the need of complex carbohydrate, while Greek yogurt boosts my protein & calcium intake and improve digestion.

Ingredients
- 1 can drained, rinsed Chickpeas (garbanzo beans, bengal gram), mature seeds, canned, drained, rinsed in tap water\~^CHICKPEAS (GARBANZO BNS,BENGAL GRAM),MAT SDS,CND,DRND,RNSD~
- 1 cup chopped Celery, raw
- 1 cup chopped Cauliflower, raw
- 1 tbsp chopped Onions, raw
- 1 cup chopped Carrots, raw
- 1 3 pieces, 20grams pobalano pepper, raw, fresh, uncooked
- 1 tbsp Spices, ginger, ground
- 1 tbsp chopped Garlic
- 1 tbsp Spices, curry powder
- 1 tbsp, whole Spices, cumin seed
- 1 cup SWANSON BROTH, Vegetable Broth
- 1 dash Salt, table
- 1 tsp Oil, olive, salad or cooking
- 1 fl oz Lemon juice, raw
- 1 sprigs Coriander (cilantro) leaves, raw
- 1 container Yogurt, Greek, plain, nonfat
Instructions
- Take a deep sauce pan and heat oil over medium heat. Sauté onions, pepper, ginger and garlic until fragrant.
- Add chopped carrots and celery, mix and cook until tender.
- Add cauliflower, chickpeas, vegetable stock and all the spices, stir and cook to a simmer.
- Cover and let simmer for about 15 minutes.
- When the vegetables are tender, add coconut milk, lemon juice and cilantro, stir to mix.
- Bring to boil and cook until thick. Remove from the heat.
- Serve with Greek yogurt.
