This delicious chicken and coconut curry combines the flavor of spices and coconut milk in a way to prepare the tastiest curry I have ever had. This recipe is loaded with good fat and protein. Coconut milk is a good source of minerals and saturated fat that is actually good for health and increases the fat burning process in the body. Add some seasonal vegetables in this curry to make it more potent - broccoli, leeks, carrot, mushroom, celery and bell pepper all go well with this recipe.

Ingredients
- 1 fillet Chicken breast, low fat
- 1 cup, sliced Onions, raw
- 1 tbsp chopped Garlic
- 2 tbsp Nuts, coconut milk, canned (liquid expressed from grated meat and water)
- 1 tsp Oil, coconut
- 1 tbsp Spices, curry powder
- 1 dash Salt, table
- 1 tsp, ground Spices, pepper, black
Instructions
- Cut the chicken in cubes.
- Heat oil in a large skillet and sauté onion and garlic until translucent.
- Add chicken cubes and cook on medium heat until no longer pink.
- Sprinkle curry powder, salt, pepper and add coconut milk, stir to combine.
- Bring to a boil and reduce the heat to low, cover and let simmer for 7-8 minutes.
- When the chicken is cooked through, remove from the heat and serve with rice or noodles.
