Ingredients
- 1 cup Beans, black turtle, mature seeds, canned
- 1 cup Beans, white, mature seeds, canned
- 1 small, large, medium Sweet potato, raw
- 2 cup SWANSON BROTH, Vegetable Broth
- 1 cup, sliced Onions, raw
- 1 tbsp chopped Garlic
- 1 tbsp Spices, coriander seed
- 1 tbsp Ground cumin
- 1 tablespoon Oil, olive, salad or cooking
- 1 fl oz Lemon juice, raw
- 1 cup Coriander (cilantro) leaves, raw
Instructions
- Peel and cut the sweet potatoes in small pieces.
- Heat the oil in a large skillet over medium heat. Cook the onion until translucent.
- Add spices – coriander, cumin, salt and pepper, stir and cook for 30 seconds.
- Add broth, beans and sweet potatoes.
- Mix all the ingredients and bring to a boil, then cover and let simmer for 30 minutes over low heat while stirring occasionally.
- After 30 minutes, add lime juice and cilantro stir and cook for 2-3 minutes and remove from the heat.
- Serve warm.
