Make Thai green prawn curry in just 15 minutes and enjoy a gourmet meal. Serve this with wholegrain noodles to add complex carbs. Prawns are easily available seafood that is rich in protein, minerals and omega -3 fatty acids. I like to add baby spinach in the curry to increase iron and fiber in the recipe; it’s a good healthy addition to the original recipe.

Ingredients
- 1 pack, 12 prawns Prawns, raw, uncooked cleaned and devained
- 0.5 Can Coconut milk
- 1 tablespoon Thai green curry paste
- 1 sprigs Coriander (cilantro) leaves, raw
- 1 tsp Sugars, granulated
- 1 cup Baby Spinach
- 0.5 fl oz Lemon juice, raw
Instructions
- Wash, devein and pat the prawns dry.
- Combine in a bowl: curry paste, sugar, cilantro and 2 tablespoon of coconut milk and blend to a smooth paste.
- Heat a non stick pan over medium heat and cook this paste for 1-2 minutes while stirring frequently.
- Add remaining coconut milk and stir to mix.
- Bring to a boil, then add prawns and baby spinach and cook for 5 minutes.
- Add lime juice, stir and remove from the heat.
- Serve hot.
