Zucchini lasagna [Bulkbites.com]

This recipe is as tasty as it is healthy! Stuffed with zucchini and quality protein, you can even serve this for family and friends without them knowing they are eating quality bodybuilding food. If you don't have minced chicken, you can make this recipe with some lean ground beef. It takes a little work to make, but certainly worth the effort!

Ingredients
- 1 tablespoon Oil, olive, salad or cooking
- 4.5 100g Squash, summer, zucchini, includes skin, raw
- 1 medium Onions, raw
- 5 cup, whole Mushrooms, white, raw
- 2 clove Garlic, raw
- 1 cup Tomato sauce, canned, no salt added
- 1.5 unit Flat Lasagna Pasta uncooked
- 3 tbsp Cheese, parmesan, dry grated, reduced fat
- 2.5 unit Minced Chicken
- 2 100g Cheese, cottage, nonfat, uncreamed, dry, large or small curd
Instructions
- Heat up your oven 190C or 375F
- Heat up de olive oil in a skillet and bake the sliced zucchini until brownish (about 5-8 minutes). Add some salt and pepper to taste.
- Take the zucchini out of the pan and put on some paper towels to get the water out, leave the fluids in the pan
- In the fluids saute the onion and add the garlic and mushrooms. When ready take out of the pan and put on some paper towels.
- In that same pan brown the minced chicken. When the chicken is done, add the tomato sauce and leave to simmer for a couple of minutes
- In an oven dish, stack up the ingredients like this: minced chicken - zucchini - mushrooms - pasta sheets - cottage cheese - minced chicken etc.
- End with cottage cheese and sprinkle some parmesan cheese on top.
- Put in the oven for around 40 minutes
