Ingredients
- 1 oz HOUSE FOODS Premium Firm Tofu
- 1 tbsp Vinegar, balsamic
- 1 tsp Spices, garlic powder
- 0.5 cup Quinoa, cooked
- 0.5 cup drained, rinsed Chickpeas (garbanzo beans, bengal gram), mature seeds, canned, drained, rinsed in tap water\~^CHICKPEAS (GARBANZO BNS,BENGAL GRAM),MAT SDS,CND,DRND,RNSD~
- 1 cup Mixed Salad Greens
- 1 medium whole Tomatoes, red, ripe, raw, year round average
- 1 tbsp, leaves Spices, basil, dried
- 1 tsp Salt, table
- 1 tbsp Spices, pepper, black
- 1 wedge yields Lemon juice, raw
- 1 gram Oil, olive, salad or cooking
- 1 nuts Nuts, pine nuts, dried
Instructions
- Cook Quinoa and chickpeas in water until soft and fluffy.
- Cut the tofu in ½ inch thick, big triangles. Season the tofu with vinegar, oil, basil, garlic, salt and pepper. Let it soak in this marinade for 30 minutes.
- Preheat the grill to medium high and grill the tofu for 5 minutes each side, until brown.
- Meanwhile prepare the salad, add chopped greens, cooked quinoa, chickpeas, pine nuts, tomatoes, lemon juice, salt and pepper together. Toss the salad ingredients to combine flavors.
- Serve the salad topped with grilled tofu slices.
