Beef & bean nachos are my favorite recipe when I crave for something spicy and crispy but healthy at the same time. I like to top it with Greek yogurt instead of other readymade toppings to add extra protein, calcium and digestive aids to my recipe. This nacho recipe is simple and quickly to prepare, loaded with lean protein, fiber and digestive enzymes.

Ingredients
- 1 serving Beef, ground, 95% lean meat / 5% fat, raw
- 0.5 cup Beans, black turtle, mature seeds, canned
- 1 chips Snacks, corn-based, extruded, chips, unsalted
- 50 gram Taco Spices Seasoning Mix
- 1 medium Onions, spring or scallions (includes tops and bulb), raw
- 1 oz PACE, Jalapenos Nacho Sliced Peppers
- 1 tbsp Cheese, parmesan, dry grated, reduced fat
- 10 gram Yogurt, Greek, plain, nonfat
- 1 1 cup Water
Instructions
- Cook beans with water until tender or use canned beans for the recipe.
- Take a deep skillet and brown the ground beef over medium heat.
- Then add taco mix and water, stir and let it simmer for 5 minutes.
- Add beans, mix gently with beef and cook for 2-3 minutes.
- Meanwhile preheat to 375 degree Fahrainheit the oven to high.
- Take an oven safe pan and place the corn chips at the bottom.
- Generously spoon the beef and bean mixture on the corn chips.
- Top with grated cheese and bake just to melt the cheese for about 2-3 minutes.
- Remove from the oven and sprinkle pickled jalapeƱo, chopped scallions, hot sauce and Greek yogurt all over the nachos.
- Serve immediately.
