Here is a delicious light snack recipe. Whole wheat, soft tortilla stuffed with seasoned ground beef then folded and baked in oven until crisp. This super tasty and crispy snack is loaded with lean protein, complex carbohydrate and fiber. I prefer to add Italian herbs and olives in the stuffing to get my dose of anti oxidants as stuffing is highly experimental.

Ingredients
- 1 serving Beef, ground, 95% lean meat / 5% fat, raw
- 1 1 Large Tortilla La Tortilla Factory Low Carb High Fiber Tortilla, Large
- 1 medium Egg, whole, raw, fresh
- 1 medium Bell pepper (green/yellow/red)
- 1 tbsp chopped Onions, raw
- 1 tbsp Cheese, parmesan, dry grated, reduced fat
- 1 small Olives, ripe, canned (small-extra large)
- 1 tsp Spices, paprika
- 1 dash Salt, table
- 1 tsp, ground Spices, pepper, black
- 1 tbsp Ground cumin
- 1 gram Oil, olive, salad or cooking
Instructions
- Chop garlic, onion, olives, and green bell pepper into small pieces.
- Heat oil in a non - stick pan, and sauté onions.
- When the onion becomes translucent, add the ground beef, season with cumin, paprika, and salt & pepper. Cook until brown.
- Separate the egg yolk from the white; add egg white and cheese into beef stuffing (This will help the stuffing stick when placed into the tortilla). Whisk the egg yolk in a small bowl, set aside for later use.
- Let the beef stuffing- mixture cool and meanwhile preheat the oven to 350 degrees Fahrenheit.
- Place the tortilla on the kitchen surface and stuff them with beef mixture, brush egg yolk around the edges and fold them in half moon shape.
- Press the edges to seal the tortillas and coat with egg yolk from the top.
- Once the tortillas are ready place them on a baking sheet and bake for 20 minutes or until crisp.
- Remove from the oven and serve with tomato sauce.
