Ingredients
- 1.02 tsp Oil, olive, salad or cooking
- 1.98 tbsp Parsley, fresh
- 6 large Egg, whole, raw, fresh
- 1.02 dash Salt, table
- 1.02 dash Spices, pepper, black
- 1.02 spray , about 1/3 second Oil, PAM cooking spray, original
- 0.48 tsp Spices, pepper, red or cayenne
- 1.98 cloves Garlic, raw
- 0.48 cup, chopped or sliced Tomatoes, red, ripe, raw, year round average
- 1.02 tbsp Chives, freeze-dried
- 3 cup, diced Potatoes, white, flesh and skin, raw
- 1.02 unit Bell pepper (green/yellow/red)
- 1.02 1 cup sliced Purple onions
Instructions
- Spray cooking spray over the surface of a cast-iron skillet. Heat some oil in the skillet over medium flame.
- After chopping, add garlic, bell pepper and onion and saute for at least 5 minutes.
- Over the vegetable mixture, start arranging the potato.
- Sprinkle little red pepper, black pepper and salt over the mixture.
- Cover the mixture and continue heating for at least 20 minutes or until the potato is tender.
- Preheat a stove. Now mix eggs, chives and parsley in a bowl.
- Pour the above mixture over the vegetables and cook under medium flame for at least 10 minutes.
- Once the mixture is set, top it with tomato and continue heating so that it turns light brown.
- Just before serving, garish the dish with fresh parsley sprigs.
