Ingredients
- 1 cup Couscous, dry
- 1 large Oranges, raw, all commercial varieties
- 1 tbsp Spices, cinnamon, ground
- 1 clove Garlic, raw
- 3 100g Chicken breast tenders, cooked, conventional oven
- 1 medium Squash, summer, zucchini, includes skin, raw
- 1 medium Onions, raw
- 1 medium Bell pepper (green/yellow/red)
Instructions
- Prepare the couscous according the packaging
- Heat up the orange juice, keep stirring until it is boiling
- Mix the orange juice with the cinnamon with the couscous
- Stir 2 tbsp of olive oil with the squeezed garlic, salt and pepper
- Cut the chicken, onion, bell pepper and the zucchini into slices
- Brush the chicken and zucchini with the garlic-oil and cook on both sides for about 3 minutes
- Heat up the rest of the oil and saute the onion and bell pepper (5 min)
- Divide the couscous over 2 plates and add the veggies
