Ingredients
- 3.04 oz HOUSE FOODS Premium Firm Tofu
- 0.48 can Tomato products, canned, paste, without salt added
- 6 medium whole Tomatoes, red, ripe, raw, year round average
- 6 cup Rice, brown, long-grain, raw
- 1.04 cup, chopped Onions, raw
- 2 clove Garlic, raw
- 4 1/2 cup Bush's Best, Black Beans
- 3.04 medium Bell pepper (green/yellow/red)
- 2 dash Salt, table
- 4 dash Spices, pepper, black
- 1.04 tablespoon Oil, olive, salad or cooking
Instructions
- Cook rice according to package
- Chop the onions, garlic and dice tomatoes and bell pepper
- Heat up olive oil in a large skillet, and add onions and garlic
- Cook until onion is translucent, then crumble tofu and add.
- After a couple of minutes add cubed tomatoes and bell pepper
- Let simmer for 5 minutes, then add black beans
- Let simmer for 10 more minutes and spice up with pepper and salt
- Mix with rice and serve.
