Ingredients
- 1 cup Shrimp, peeled and deveined
- 1 avocado, NS as to Florida or California Avocados, raw, all commercial varieties
- 1 pepper Peppers, hot chili, red, raw
- 1 piece Ripe Mango
- 1 tsp Lemon rind, grated
- 1 cup Coriander (cilantro) leaves, raw
- 1 dash Salt, table
- 1 cup Mixed Salad Greens
- 1 fl oz Lemon juice, raw
- 1 1 cup Water
Instructions
- Wash and devein the shrimps, boil with water for about 4-5 minutes. Drain and set aside to cool.
- Take a bowl and combine shrimps, mango, lemon juice and zest, cilantro, red chili powder and salt. Mix well and leave to marinade for 30 minutes.
- Peel and cut the avocado in half and remove the pit.
- Take a serving plate and arrange salad green at the bottom. Place avocado on the salad and fill with the shrimp mixture.
- Sprinkle some lemon juice on the top and serve.
