This Italian meatball soup is actually low in fat and extremely healthful to be included in a bodybuilder diet plan. In this recipe I cut down on cheese from the soup to make it low in fat, it comes out as a winning soup recipe - packed with lean protein, fiber, iron, and antioxidants. I am using ground turkey for the meatballs and a cup of baby spinach for the soup, feel free to add chard, collard, spinach, kale or any other green vegetables as you prefer.

Ingredients
- 4 oz Ground turkey, 93% lean, 7% fat, raw
- 1 tbsp chopped Onions, raw
- 1 tbsp chopped Garlic
- 1 oz Cheese, parmesan, dry grated, reduced fat
- 1 tsp, ground Spices, basil, dried
- 1 medium Egg, whole, raw, fresh
- 5 gram Bread crumbs, dry, grated, plain
- 1 cup chopped Carrots, raw
- 1 serving 1 container CAMPBELL'S Low Sodium Soups, Chicken Broth
- 1 cup Spinach, raw
- 1 gram Thyme, fresh
- 1 tsp Oil, olive, salad or cooking
- 1 dash Salt, table
- 1 tbsp, ground Spices, pepper, black
Instructions
- To make the meatballs – combine ground turkey, 1 tablespoon chopped onion, garlic, salt, bread crumbs, cheese, basil, parsley, pepper and egg in a large bowl.
- Shape into tiny meatballs, roughly ½ inch in diameter.
- Heat oil in a large non stick pan and shallow fry the meatballs while stirring until brown from all the sides.
- When done, place the meatballs on a paper towel and set aside to absorb excess oil.
- To make the soup – sauté remaining onions in the same pan and oil, until translucent.
- Add garlic and carrot, cook for about 4-5 minutes.
- Add broth and bring to a boil.
- Add meatballs, spinach, salt and pepper. Cover the pan and turn down to simmer for about 30 minutes.
- Serve hot with Italian bread.
