This is a quick way to make some tasty lunch or snacks. The surimi "crab" is a cheap source of protein.
You can eat this mini pizza's straight out of the oven, or take it to work. I actually prefer to eat them cold!

Ingredients
- 2 100g Fish, surimi
- 2 pita, large Bread, pita, whole-wheat
- 0.2 100g Pesto, red or green
- 1 cup, shredded Cheese, mozzarella, nonfat
- 1 large whole Tomatoes, red, ripe, raw, year round average
Instructions
- With a spoon smear the pesto on top of the pita bread
- Add the other recipes, and top of with the mozarella
- Put in the oven for about 7 minutes (when the mozzarella turns brown)
- Enjoy when it is still hot, or eat it when cold!
