Zucchini belongs to that class of vegetables that is low in calories but high in nutrients. Its high fiber content means it helps in preventing against colon cancer and reduces constipation. Zucchini is also special in that it has high antioxidant properties that help in negating the effects of free radicals. The moderate potassium content in zucchini promotes heart health and maintains blood pressure levels. Ingredients
- 1 dash Salt, table
- 5 medium Squash, summer, zucchini, includes skin, raw
- 1 spray , about 1/3 second Oil, PAM cooking spray, original
- 0.24 cup Cheese, parmesan, dry grated, reduced fat
- 1 slice Plain Butter
Instructions
- Add salt to water and bring it to boil.
- Wash zucchini and cut it into strips of 3” long and 2” thick.
- Now add zucchini strips into water and cook for 4 minutes or until they become tender.
- Once the zucchini strips are tender, drain them using colander.
- Spray a boiling pan with nonstick cooking spray and arrange the zucchini strips in it evenly.
- Brush zucchini strips with melted butter and sprinkle parmesan cheese over it so that the strips are almost covered with it.
- Now bake the zucchini strips until they are brown and cheese has melted.
- Serve hot.
