This is one of the most authentic curry recipes that I have enjoyed recently. Eggs are easily available and excellent source of protein. They have plenty of nutritional benefits, and are packed with protein, iron, calcium, and vitamin A & B. In this Indian style egg curry recipe, hard boiled eggs are cooked in tasty gravy. Try this delicious egg curry that can be served with mixed whole grain medley or bread.

Ingredients
- 4 medium Egg, whole, raw, fresh
- 10 gram Yogurt, Greek, plain, nonfat
- 1 tbsp Spices, ginger, ground
- 1 tbsp chopped Garlic
- 0.5 cup, chopped or sliced Tomatoes, red, ripe, raw, year round average
- 1 tbsp chopped Onions, raw
- 1 tsp Spices, chili powder
- 1 tsp Spices, turmeric, ground
- 1 tbsp Spices, coriander seed
- 1 tsp, whole Spices, cumin seed
- 1 tsp Spices, allspice, ground
- 1 dash Salt, table
- 1 tsp Oil, olive, salad or cooking
- 1 cup Coriander (cilantro) leaves, raw
- 1 1 cup Water
Instructions
- Boil the eggs in water, when done peel and set aside for later use.
- Put chopped onions, Greek yogurt and tomatoes in a blender and blend until smooth.
- Heat oil in a non stick pan and add cumin seeds. When they start sputtering add the onion and tomato puree.
- Add ginger, garlic paste, red chili powder, coriander powder and turmeric powder. Stir and cook over low heat until the oil is separated. It may take 4-5 minutes.
- When the oil is separated from the mixture add one cup of water, stir and cook to a boil.
- Add chopped cilantro, all spice powder and boiled eggs. Cook for 1-2 minutes and remove from the heat.
- Serve hot.
