Instructions

  • In a large bowl, mix green onions, mayonnaise, salt, pepper, lemon juice, pimiento and egg white.
  • Fold in 1 cup breadcrumbs and crabmeat.
  • Divide the crab mixture into 12 equal portions and give each portion the shape of a patty (2-inch round).
  • Dredge crab cakes in breadcrumbs and then coat them with cooking spray.
  • Heat a little oil in a pan over medium heat. Add about 6 crab cakes and cook them on both sides till they are browned.
  • Remove the crab cakes and keep them warm. Repeat the procedure with the remaining crab cakes. Serve the crab cakes hot.
