Instructions

  • Preheat the oven to 375 F and prepare a baking tray by placing an aluminum foil on it.
  • Cut the cooked sweet potatoes in small bit size pieces.
  • Combine rosemary, salt and pepper and toss with sweet potatoes.
  • Cut the bacon strips to roll the sweet potato pieces.
  • Wrap sweet potato pieces in bacon strips and secure it with toothpick.
  • Arrange the bacon wraps in the baking tray and spray some olive oil on them.
  • Bake for 20 minutes or until bacon are crisp and brown.
  • Sprinkle some lemon juice and bacon wrapped sweet potatoes are ready to enjoy.
