Instructions

  • To make the peanut butter sauce – blend together peanut butter, garlic, cilantro, green chili, salt, and lemon juice until smooth. Transfer to a small bowl and refrigerate until serve.
  • Pound the chicken breast to make it thin and stretch. Cut into 1 inch long stripes.
  • Season the chicken strips with salt, pepper, oil and soy sauce. Leave the chicken pieces in the marinade for one hour if you have time.
  • Thread the chicken pieces onto a skewer.
  • Heat the grill on high heat and spray oil to greats, place chicken skewers and grill about 5 minutes per side. Rotate the skewers occasionally for even cooking.
  • When the chicken is cooked through, remove from the grill and serve with peanut sauce.
