Instructions

  • In a bowl, combine 2 cups flour, salt, garlic powder and paprika.
  • In another bowl, mix 3 tbsp water and eggs.
  • Add breadcrumbs in a blender and process for at least 15 seconds. Then combine the grounded breadcrumbs, salt, pepper, oregano and 4 tbsp flour in another bowl.
  • Dredge batches of zucchini in flour mixture, followed by egg mixture and breadcrumb mixture.
  • Set the oven temperature to 325 degrees Fahrenheit / 160 degrees Celsius.
  • Pour oil into a shallow bowl and place it in the oven to fry zucchini for at least a couple of minutes.
  • Drain excess oil by transferring the fried zucchini over paper towels.
  • Sprinkle the fried zucchini with parmesan cheese and serve hot.
