Instructions

  • In a bowl, mix green onions, orange juice, cilantro, ginger, vegetable oil, soy sauce, rice wine vinegar, hot red chili and orange zest. Add shrimp and toss to coat. Cover the mixture and marinate in refrigerator for a few minutes.
  • Now remove shrimp from the bowl, reserving marinade. Thread shrimp along with orange quarters alternatively onto skewers.
  • Heat a pan that is lightly coated with cooking spray over medium heat. Cook skewers on both sides for a few minutes, while providing a coat of marinade regularly.
  • Serve hot.
