Instructions
- Preheat the grill to a suitable temperature. Place the rolls (cut sides up) on it and toast them for a couple of minutes. Keep the rolls aside.
- Heat a little oil in a pan over medium heat. Cook sausage in it until it is slightly browned. Remove the sausage from the pan and keep it aside.
- Add a little oil in the pan. Add onions and bell peppers and saute until they become tender. Now add the garlic and the sausage.
- Reduce the heat and continue to cook for a few more minutes.
- In a bowl, mix the egg whites and the eggs and pour the mixture into the peppers and onions.
- Use a spatula to gently scramble the eggs into the peppers and onions.
- Stop cooking the eggs when they start to glisten and are moist. Transfer 2/3 cup of this mixture into each roll and serve hot.
