Instructions
- To start with the recipe select big and long sweet potato prick it with fork several times and bake them in oven for 30-40 minutes at 400 degree F or until tender.
- Meanwhile prepare the stuffing, take a bowl and mix cooked spinach, roasted peanuts, chili flacks, salt and pepper to combine all.
- When the sweet potatoes are tender remove from the oven and allow it to cool a bit.
- Now cut the sweet potatoes lengthwise, and scoop out the flash from center, leave little flash with the skin to refill it with stuffing. It should looks like little boats.
- Mash the flash with fork and mix it with spinach mixture.
- Refill the sweet potato boats with the spinach mixture and bake for 10 minutes in the oven at the same temperature.
- When the potato boats are hot remove from the oven and serve.
