This is one of my favorite snacks recipe which reminds me my childhood road side snacks treats. I adore this savory snack so much and you to also try it. These crispy sweet potatoes bites are perfect refreshment for anytime of the day. They are good enough to provide me energy and satisfaction. The recipe is simple and nutritious, two types of onions caramelized onion and green onion provides it a unique flavor.

Sweet potatoes are a natural powerhouse of energy and nutrition. It is recommended to enjoy this treat with a glass of protein shake after workout.

Instructions

  • Prepare the spicy dressing by mixing mustard sauce, vinegar, honey and chopped green onion and mix well.
  • Peel and cut the sweet potatoe into bit size pieces (one inch cubes).
  • Boil and cook with water for 5-8 minutes until almost done. Do not over cook them. Drain and reserve for later use.
  • Take a non stick pan and sauté chopped red onions with olive oil. Cook the onions until caramelized and golden brown. Transfer the onions to a plate and reserve.
  • In the same pan, heat little olive oil add sweet potato bites, thyme, salt and pepper.
  • Mix and cook on low heat while stirring until crisp and brown. This may take up to 5 minutes.
  • Add caramelized onions and green onion dressing, mix well remove from the heat.
  • Enjoy these savory sweet potato bites.
