Instructions

  • Add grated zucchini, eggs, salt, pepper, garlic, chopped parsley and lemon zest in a bowl.
  • Combine the above ingredients well while adding flour slowly.
  • Heat 2 tbsp olive oil in a large frying pan. Once the oil is sufficiently hot, drop-in 2 tbsp of zucchini mixture over the pan. Repeat the process for the remaining mixture. Make sure that you leave sufficient space between the fritters.
  • Cook the fritters until they turn golden brown. Flip them over and continue cooking the other side so that it too turns golden brown.
  • Transfer the fritters onto plate and garnish it with lemon wedges and parsley springs.
  • Serve immediately.
